Kale Frittata

  • 2 tablespoons coconut oil
  • 4 handfuls of kale, finely chopped
  • 1 large brown onion, finely diced
  • 1 large red onion, finely diced
  • 1 pack of frozen broccoli (defrosted)
  • 4 large tomatoes, chopped
  • 1/2 cup fresh basil, roughly torn
  • Salt and pepper
  • 8 large eggs
  • 1 cup Original Almond Breeze


  1. Preheat oven to 180 degrees
  2. Heat the coconut oil in a large frying pan and add the kale, diced brown and red onion, broccoli, tomatoes and basil. Cook for 5 – 10 minutes
  3. In a separate bowl beat the eggs together with the Original Almond Breeze and season with salt and pepper
  4. Transfer your veggies into a large baking dish and arrange them evenly and pour over the egg mixture
  5. Bake in the oven for 25  minutes. Serve with a side salad and enjoy hot or cold
