The best thing about apple season has to be its exceptional pairing with all time favourite Sri Lankan spice, cinnamon. This Apple Cinnamon Cake created by @lalasplate for our pals at Almond Breeze Australia is refined-sugar free, moist, fluffy and light, and is guaranteed to warm bellies and hearts.

CAKE

  • 1/3 cup coconut oil (melted) + extra for greasing
  • 3/4 cup unrefined coconut sugar
  • 2 eggs (beaten)
  • 1½ cups plain flour (or gluten-free sub)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda/bi-carb soda
  • Pinch of salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup Vanilla Unsweetened Almond Breeze
  • 2 pink lady apples (thinly sliced)

CINNAMON TOPPING:

  • 1 teaspoon cinnamon
  • 1 tablespoon coconut sugar
  • 1 teaspoon coconut oil (melted)

METHOD

1. Preheat oven to 180 degrees C and grease a square cake tin with coconut oil.
2. Add coconut oil and coconut sugar to a large mixing bowl and stir until well combined.
3. Add beaten eggs and mix well. Add in flour, baking powder, baking soda, salt, cinnamon, vanilla extract and almond
milk and stir well until a smooth batter is formed.
4. Pour ½ of the cake batter to your greased cake tin and top with ½ of the sliced apple. Top with the other half of the
remaining batter and with the remaining apple slices.
5. Sprinkle over cinnamon, coconut sugar and melted coconut oil to cover the apples.
6. Place in oven and bake for 30-35 minutes, or until lightly golden brown and when a skewer is inserted it comes out
clean! Enjoy!
