Gluten-Free Gooey Chocolate Self Saucing Pudding

Pudding

  • 1 cup gluten-free self-raising flour
  • 1/3 cup cacao or cocoa powder
  • 1 tsp baking powder
  • 1/2 cup maple syrup 
  • 1/3  cup olive or coconut oil
  • 1/2 cup Chocolate Almond Breeze Almond Milk 
  • 2 eggs, lightly beaten

Sauce

  • 1/2 cup maple syrup
  • 2 tablespoons cacao or cocoa powder, sifted
  • 1 1/4 cups boiling water

To Serve

  • Coconut cream and berries.

METHOD

  1. Preheat oven to 180 degrees C or 160 degrees C fan-forced. Grease an 8 cup capacity ovenproof baking dish.
  2. Sift flour, baking powder and cocoa into a large bowl. 
  3. In a separate bowl add the olive oil, almond milk and eggs and whisk to combine. 
  4. Add the wet ingredients to the dry ingredients and mix together until you have a smooth cake batter and pour into your baking dish or small ramekins. 
  5. Mix all the sauce ingredients in a medium-sized jug or bowl.
  6. Slowly pour the sauce to cover pudding. 
  7. Place dish onto a baking tray. Bake for 35 to 40 minutes or until pudding bounces back when pressed gently in the centre.

Serve hot with coconut cream and berries and enjoy with your favourite people!
