Coconut oil spray (to spray baking dish)
2 eggs
1/4 cup of honey
1 teaspoon vanilla extract
1 teaspoon fresh ginger – grated
½ cup of Unsweetened Almond Breeze
1 cup spelt flour
1 tsp cinnamon
½ teaspoon baking powder
½ teaspoon baking soda
1/2 chopped pecans for decoration


1. Heat the oven to 325 degrees and spray a bread tin with coconut oil
2. In a large bowl, whisk the eggs and add in honey, vanilla extract, ginger and Unsweetened Almond Breeze
3. In a separate bowl mix together flour, cinnamon, baking powder and baking soda
4. Add all ingredients together and gently stir. Be careful not to over mix
5. Pour mixture into the bread tin, decorate with pecans and bake for 35 minutes
