8 Lunch leftover recipes you’ll LOVE

One of our favourite foods is leftovers. They make the perfect lunch over the weekend or for work popped into a easy carry container or thermos. So why not tailor your dinner menu to what you want to reheat and eat the next day? We reckon that’s just smart. Plus it’s an easy way to cut costs and save time if you want warm, nourishing food without trawling the streets looking for it.

To kick off your winter leftovers menu we’ve shared our favourite recipes below that’ll be just as tasty the day after and make you the envy of all your colleagues while you dine like a boss in the lunchroom!

 

1. Crustless Zucchini Quiche

What’s not to love about this easy Crustless Zucchini Quiche recipe. It includes courgettes, capsicum, corn and onion but it would be super easy to swap out any of the vegetables to suit whatever time of year you decide to indulge in this easy and tasty treat. It makes divine leftovers  every season, and when the weather warms up, it makes an ideal addition to the family picnic!
