One of our favourite foods is leftovers. They make the perfect lunch over the weekend or for work popped into a easy carry container or thermos. So why not tailor your dinner menu to what you want to reheat and eat the next day? We reckon that’s just smart. Plus it’s an easy way to cut costs and save time if you want warm, nourishing food without trawling the streets looking for it.
To kick off your winter leftovers menu we’ve shared our favourite recipes below that’ll be just as tasty the day after and make you the envy of all your colleagues while you dine like a boss in the lunchroom!
1. Crustless Zucchini Quiche
What’s not to love about this easy Crustless Zucchini Quiche recipe. It includes courgettes, capsicum, corn and onion but it would be super easy to swap out any of the vegetables to suit whatever time of year you decide to indulge in this easy and tasty treat. It makes divine leftovers every season, and when the weather warms up, it makes an ideal addition to the family picnic!
2.Eggplant Tofu Curry
Our Eggplant Tofu Curry is the ultimate winter warmer recipe and like all great curries only gets better with time. Serve with brown rice, brown basmati or quinoa for a super boost of protein to give your brain an afternoon recharge.
3. Pummpkin and Carrot Soup
Hands up who doesn’t like pumpkin soup? Exactly! Now our Pumpkin and Carrot Soup takes this Kiwi fave to the next level. This recipe makes use of the GIANT carrots that come out of Ohakune this time of year and is the finest reason we can think of to carve up that pumpkin. The best thing about this recipe is its roasted veges that makes the flavours POP!

Cauliflower is one of the healthiest vegetables on the menu and is a star ingredient of this gorgeous Vegetable Casserole. Like our crustless quiche, this recipe is perfect all year round loaded with all your favourite vegetables. But let’s be honest, ideal in winter for dinner and definitely lunch the next day!
5. Not So Cheesey Mac ‘N Cheese
Good luck making this vegan Not so Cheesey Mac ‘n’ Cheese last until lunch leftovers but you can try, right? This comfort food from the gods has come down from heaven to liven your palate for dinner and again the next day. Enjoy!
6.Celeriac and White Bean Soup
Soup is a winter staple and our Celeriac and White Bean Soup paired with a crusty bread roll for lunch the day after will warm you all over again. It’s pretty much a hug in a bowl! Swap out chicken stock for vege stock and you have a plant-based gem on your hands. Go old school and take your thermos to work!
7.Bacon and Zucchini Frittata
This Bacon and Zucchini Frittata recipe makes a superb dinner and brunch, but it also makes one hell-licious lunch leftover! It’s a great way to get your greens with spinach, basil and zucchini and well…. bacon. ‘Nuff said!

OK so our Banana Bread Breaky Bowl is not strictly a lunch leftover but…. hear us out… if you make a couple of these cutie-pies in the evening, you can take one the next day for lunch instead of breaky.
